Hi, since super 8 film is housed in those cartridges, is it okay to remove film mid-cartridge and then replace later? Thanks!

I've done this hundreds of times, and never had a problem, although it always makes me nervous, and once I open a cartridge out of the package, I shield it from the light as much as I can, and if I pull one out of the camera, I do the same, then put it back in it's box as soon as possible.
I can imagine if it were sitting there, with direct light shining into the opening, there just HAS to be some fogging going on at some point!

Absolutely. Just run the camera for a couple of seconds before removing the cartridge and after reinserting it. A small section of film in and around cartridge window will be overexposed to the point of ruin, but the film inside the cartridge won't. The amount ruined in a silent cartridge (which is all we've got these days) will probably be around a foot or two.
